If you’re a serious egg-lover like me, you’ll love experimenting with eggs on a Paleo diet. Eggs benedict, scrambled eggs, different kinds of omelettes, poached eggs, frittatas, yummy quiches….you name it, I made it.
Here is a tried-and-tested egg muffins recipe that requires minimal effort and is high on taste, health and energy – all the good stuff!
1 Green pepper1 Red pepper1 Sweet onion1 Jalapeño pepper10 EggsSalt & pepper
1. Whisk all the eggs and chop all the veggies finely and keep them aside.2. Sauté the onions in olive oil for 5 minutes.3. Add the chopped peppers and keep sautéing for a few more minutes.4. When cooked and cooled, mix them with the eggs and add in salt and pepper.5. Spray a large muffin pan and pour in the egg batter till the moulds are three-fourths full.6. Place in a preheated oven at 350F (175C) for about 15 minutes.7. Once the tops are a lovely golden and the muffins look fluffy and puffy, pop them out and enjoy a nutritious breakfast with your favorite sauce.
Our recommendations: Some salsa or a spicy chipotle sauce would be a perfect fit for these yummy egg muffins.

1 + 3/4 cups Almond flour2 Eggs1 teaspoon Baking powderSalt1 teaspoon Pure vanilla extract1 cup Almond milk (or depending on how thin or thick you want the batter to be)Pomegranate juice
1. Whisk the eggs with the almond milk and the vanilla extract.2. Mix in the flour, salt and baking powder and whisk till smooth.3. Heat up a large pan and coat it with a light layer of oil.4. Pour a ladleful of batter gradually and form a round pancake (or a heart one if you fancy a romantic breakfast!).5. Cook for about 4 minutes till a few bubbles escape from the top and the sides are firm. 6. Be careful while flipping these almond flour pancakes as they are not as solid as the regular wheat ones. 7. Cook for another minute and then stack them up.8. For the sauce, pour pomegranate juice into a heavy-bottomed pan and just thicken it up.
Presto! You have yummy pancake sauce.

Paleo Breakfast Recipe #3 – Paleo Oatmeal with Bananas & Cream

Fret not, as have a faux oatmeal recipe for you that will fill you up (in a wholesome way) and fulfil your desire for some mushy oatmeal.
And the best part?
It takes minutes to whip up!
1 Banana, ripe2 tablespoons Coconut butterSea salt, a pinch1 teaspoon Cinnamon powder (you can use less but I love cinnamon in my morning meals!)
1. Mash the banana and add in the salt and the cinnamon.2. Melt the coconut butter in a saucepan over very low heat, till it’s nice and runny.3. Dump it in the banana mix and stir things up. It will be grainy and resemble a little like oatmeal.4. Top with fresh berries and nuts and you’re good to go!
