Start your day with this amazing and very tasty avocado and bacon omelet.
You will need: 1 avocado, 1 tablespoon fresh cilantro (minced), 2 tablespoons red onion (minced), 4 bacon slices, 1 dash hot sauce and 4 eggs.
Cook the bacon until it becomes crisp. Meanwhile, whack the avocado in half, remove the pit and scoop the flesh into a separate bowl. Mash it up so it is fine, but not too fine – having some texture will make this meal even more delicious.
Add the cilantro and onion to the same bowl. Once the bacon is done cooking, drain and crumble it in, too. Make your omelets, one at a time. To make them more tasty, top them with hot sauce as desired.

For this easy paleo meal, you will need the following: 1/2 cup red bell pepper (diced), 1 tablespoon fresh parsley (minced), 1 cup cooked chicken (diced), 1 artichoke heart (cooked and chopped), 2 scallions (sliced thin) and 1/3 cup lemon-balsamic mayonnaise.
To make the mayonnaise, place 2 eggs whites, 1 tablespoon lemon juice, 1/2 garlic clove and 1 tablespoon vinegar in a clean jar. Add 1/4 virgin olive oil.
